Pumkin Spice Muffins: Take II

The 4 year-old that Curly nannies wanted to make pumpkin muffins after she tasted the muffins Curly brought with her for lunch on Monday. Seeing a chance to redeem herself after the last batch of muffins, she readily agreed. So today, she and the girls went to the grocery store for the needed ingredients and set to work measuring and mixing. Baking with a 4 year-old and a 2 year-old tends to make things a bit messier and lengthens the process, but the girls all had a good time and the end result was a batch of perfect pumpkin spice muffins.

Which would have been sufficient, but Curly had a not-so-bright moment at the store when she forgot to check the chocolate chips to make sure they weren’t processed on the same equipment as peanuts. Dang it! The spunky and sweet 2 year-old has a severe allergy to peanuts, so she is not given anything that could potentially have traces of the offending food. The three girls went back to the store as soon as the muffins came out of the oven to buy more pumpkin and peanut-free chocolate chips. Curly made the second batch of muffins while her younger charge was napping and the older one was happily playing. The result, again, was a beautiful tray of muffins – without the potential to send a particular little girl to the hospital.

Luckily, the recipe only makes 12 muffins, so part of the first batch was delivered to some neighbors and the rest came home with Curly. Bee actually tried one this time, and approved. Curly has had three today.

The picture really doesn’t do the muffins justice, but they look a lot better than Sunday’s batch!
